Healthy Banana Bread Recipe

Hello everybody! I think that this is going to be my best blog post yet. Do you know why? It’s because it involves banana bread. However, this is not just any banana bread. It also involves coconut. Just before you thought it couldn’t get any better, this banana bread is also guilt free! Well, almost guilt free. Yes that’s right, you can eat it for breakfast, lunch and dinner, and not even feel bad about it. There are absolutely no refined sugars in this banana bread and it is packed full of fibre. So, you don’t have to worry about feeling bloated after having a slice (or 4). The texture is extremely moist and spongey. Personally, I think it’s best served with a slab of butter, a drizzle of honey and a nice cuppa on the side.

So, with that being said, grab your chefs hat and overripe bananas, and give it a try!

You will need:

  • 3 to 4 ripe bananas
  • 1 cup of coconut flour
  • 4 large eggs
  • 1 table spoon of coconut oil
  • 2 -3 table spoons of honey/maple syrup
  • 2 teaspoons of vanilla essence/extract
  • 1 teaspoon of cinnamon
  • 1/2 a teaspoon of salt
  • 1 teaspoon of baking powder

 

Step One: Oil your baking tin

Use some baking paper to help you lift the banana bread out of the tray when it is finished. Make sure to thoroughly coat the paper with olive oil or coconut oil.

 

Step 2: Mash the bananas

Make sure you use ripe bananas (borderline black). These are the ones that have the most flavour! Mash the bananas until all the big clumps are gone! You want to be able to mix it well with the other ingredients.

 

Step 3: Add the coconut flour and eggs

Mix the eggs and flour well with the mashed up bananas until a batter forms.

 

Step 4: Add the coconut oil

Make sure that the coconut oil is softened. Put some oil in your hair while you’re at it. It does wonders for frizzy curls!

 

Step 5: Add the honey, vanilla essence and cinnamon

Mix it in well! Don’t forget to smile at the cinnamon as your sprinkle it around just like me!

 

Step 6: Add the sea salt

Make sure that you crush the salt into finer grains or dissolve it in 3/4 table spoon of boiling water.

 

Step 7: Add the baking powder

Step 8: Pour the batter into the baking tin

Decorate the banana bread with thinly sliced bananas. Coat it with some brown sugar for a golden glaze and extra crunch.

 

The end result!

Sprinkle a little bit of icing sugar on top to make your banana bread look extra tasty! I was so happy with the end result of this recipe! Needless to say, the loaf didn’t last very long in our house. Don’t forget to spread some slated butter on if you’re wanting to indulge a little bit more! Who wouldn’t want to wake up to this for breakfast?!
